Dairy Free Mint Chocolate Chip Ice Cream

Do you have any mint lovers in your life? I absolutely love mint and I can never get enough of it. It is to the point I have started to grow it in my garden, just so that I can have some fresh and accessible whenever I need it! I clearly knew I needed to share my dairy free mint chocolate chip ice cream recipe so that you too could enjoy some healthy mint in your life!

Finding a great dairy free ice cream that does not taste overwhelmingly like pureed coconut with a lacking flavor profile of anything else can be a treasure hunt if you allow it to be! We ended up saying “No thanks!” to that headache this summer and decided to make our own ice cream!

I crave mint the most during the summer time. Mint is known for its “cooling and soothing” health properties and benefits. This herb has so many more benefits than most people are aware of traditionally. Making a healthy sweet treat, like this dairy free mint chocolate chip ice cream, can do just the trick of cooling and soothing symptoms in your life!

More about Mint

Mint is a hearty herb that grows very well on its own and can be grown indoors! No one has an excuse to not keep some fresh mint around to have in their lives.

Supports Digestion-Mint causes a reaction in your mouth and tells your body to activate your salivary glands which in turn encourages your body to focus on providing digestive enzymes that help aid and improve digestion.

Inflammation- Here comes the soothing properties. Mint can help relieve headaches and nausea. It helps bring balance and homeostasis to an imbalanced body.

Skin Care- Summer time is when the bugs come in swarms to annoy us, cuts and swelling happen more frequently, and you begin to spend more time looking for relief so that you can enjoy being outside! Mint has anti-itching properties and most bugs do not like its strong scent.

Allergies- Asthma, hay fever, or seasonal allergy symptoms can be alleviated with the help of mint! As with anything, use mint as a balancing mechanism, if you use it too much it can cause more irritation rather than relieve it!

How to make Mint Chocolate Chip Ice Cream

I'd be lying if I did not say up front how incredibly easy this recipe is to throw together. Who wouldn't be excited to throw together their own dairy free mint chocolate chip ice cream and know that you can eat as much as you want?! Well within reason of course, don't make yourself sick!

First step is to gather all of your ingredients, measure, and pour into a blender. We like to use our Vitamix for the smoothest blend and perfect texture. Make sure you don't add the chocolate chips quite yet!

Once everything is mixed and blended together, it is time to transfer your liquid ice cream to an ice cream maker to get the right consistency! It usually takes our Cuisinart Ice Cream Maker about 20 minutes to churn the mixture until frozen. We like a creamy, chilled consistency. Don't forget to toss in the chocolate chips before it is finished freezing!
