Pour the coconut flakes into a food processor and turn on high. Let it blend until it becomes coconut butter (takes roughly 10-15 minutes).
When the butter becomes mostly smooth, start to add in the dates one at a time. If you add in too many dates, it can make the butter difficult to roll into balls.
Blend until the mixture is a good consistency to form into balls.
You can place the Coconut Date balls into the freezer to store for longer.
