Craving something sweet but trying to stay away from sugar? For the Recipe of the Week we decided to bring you a nice treat that will satisfy your sugar cravings and will keep you more satiated. The beauty of this quick snack is all you need is two ingredients: coconut flakes and dates. It takes about 20 minutes to make and produces 20-30 little treats! Each Date ball only has 3g of sugar!
Coconut Date Balls
- 4 cups Coconut Flakes
- 8 Pitted Dates
- Pour the coconut flakes into a food processor and turn on high. Let it blend until it becomes coconut butter (takes roughly 10-15 minutes).
- When the butter becomes mostly smooth, start to add in the dates one at a time. If you add in too many dates, it can make the butter difficult to roll into balls.
- Blend until the mixture is a good consistency to form into balls.
- You can place the Coconut Date balls into the freezer to store for longer.
Carbs: 35% *Quick note, the more dates you add into the mixture, the sweeter the mixture will be, but the tougher it will be to roll up into balls. You can add in more coconut flakes to fix the consistency, or add in coconut oil.*
